Perfect Carbonation: Fermenting Under Pressure

Fermenting under pressure at 1 bar at room temperature can be sufficient for many types of fermentation profiles. This level of pressure helps to suppress excessive foaming and can encourage the absorption of carbon dioxide into the beer, resulting in a smoother and more carbonated final product. Furthermore, by lowering the temperature after fermentation, brewers have the flexibility to achieve higher carbonation levels in their beer by force carbonation.

Lower temperatures promote increased carbonation absorption, allowing brewers to tailor the carbonation level to their preferences, whether they desire a crisp and lively beer or a softer mouthfeel with milder carbonation. For more detailed information on temperature controlling and our Ferminator for exactly that, please read more in the section Temperature Controlling.

It is essential to monitor the fermentation process closely and adjust the pressure as needed based on factors such as yeast activity, temperature fluctuations, and desired carbonation levels.

The choice is all up to you, but we know what we’re cheering for… Go‘ Go‘ Stainless Steel…

Cleaning a stainless-steel Fermenter

This is a crucial aspect of the brewing process. Cleaning a stainless-steel fermenter ensures the quality and safety of the beer. Proper cleaning removes residues, prevents contamination, and off-flavours in the brew. Here’s a general overview of the cleaning process for a stainless-steel fermenter.

Begin by rinsing the fermenter with warm water to remove any large particles and residues. This step is essential to prepare the tank for more thorough cleaning.

Use a homebrewer-approved cleaning agent, typically base solution, which is effective at breaking down organic materials like protein soil, stains, hop residues and yeast. The concentration of the solution and the contact time should be as per the manufacturer’s recommendations. We recommend the sodium carbonate solution Chemipro Wash. Always use and wear protective equipment.

Circulate the cleaning solution through the tank and any attached piping or hoses. This can be done using a CIP (Clean-In-Place) system if the fermenter is equipped with one. The CIP system typically includes spray balls that distribute the cleaning solution evenly inside the tank.

The CIP cleaning makes it so easy and fast to clean the fermenter without any hassle. The duration of the circulation will depend on the specific guidelines of the cleaning agent used. Always use and wear protective equipment.

For areas with stubborn residues, manual scrubbing might be necessary. Use non-abrasive tools to avoid scratching the stainless-steel surface, as scratches can harbor bacteria and other contaminants. Always use and wear protective equipment.

After the cleaning agent has been circulated, thoroughly rinse the tank with clean drinkable water to remove any remaining cleaning solution. This step is crucial to prevent any chemical residues that could affect the taste of the next batch and harm the yeast.

As a final rinse use an acid to remove build-up of minerals deposits e.g. beer stone or to passivate the stainless steel. We recommend the acidic anionic solution Chemipro CIP with its low foaming properties. Always use and wear protective equipment.

After the cleaning agent has been circulated, thoroughly rinse the tank with clean drinkable water to remove any remaining cleaning solution. This step is crucial to prevent any chemical residues that could affect the taste of the next batch and harm the yeast.

After the final rinse with acid and water, inspect the fermenter for any residues, damage, or wear. Ensure that all seals and gaskets are in good condition. If the stainless-steel fermenter is not going to be used right away, allow the tank to dry completely before sealing it up to prevent any microbial growth.

Remember, the specific cleaning protocol can vary depending on the design of the stainless-steel fermenter, and the chemicals used. Always refer to the manufacturer’s guidelines and safety protocols when cleaning brewing equipment and fermenters.

Conicus Pro FAQs

The FAQ contains the answers to many of the most frequently asked questions about Conicus Pro.

With Pressure: Similar to larger fermenters, you’ll want to leave some space at the top of the fermenter to allow for foam formation and CO2 buildup. For a 32-liter fermenter, you might aim for a maximum of around 28-30 liters. This leaves enough space to manage foam and pressure.

Without Pressure: The maximum capacity would be similar, around 28-30 liters, to prevent overflow due to foam.

These are broad guidelines, and the specifics can depend on the type of fermenter, the type of beverage you’re fermenting, and other variables like ambient temperature. Additionally, monitor the pressure gauge if your fermenter has one to ensure safe operation within the recommended pressure limits.

With Pressure: The minimum viable batch size might be around 12-15 liters. It’s important to ensure sufficient CO2 production to maintain pressure, and that the headspace isn’t too large, which could lead to excessive oxygen exposure affecting the fermentation.

Without Pressure: You could potentially go a bit lower, perhaps down to 10 liters. However, larger headspace in a fermenter could increase the risk of oxygen exposure, which can be detrimental to the fermentation process and the quality of the final product.

These are broad guidelines, and the specifics can depend on the type of fermenter, the type of beverage you’re fermenting, and other variables like ambient temperature. Additionally, monitor the pressure gauge if your fermenter has one to ensure safe operation within the recommended pressure limits.
